Ingredients:


.  2 cups basmati rice

.  2 lbs boneless chicken or mutton, cut into bite-sized pieces

.  4 green cardamoms, 4 cloves, 2 cinnamon sticks, 2 bay leaves, 2 mace, 2 star anise, 1 black cardamom

.  2 cups of fried onions.

.  2 cups of mixed vegetables (optional)

.  1 cup of fried cashews, raisins and fried onions (optional)

  Instructions:


1. Soak the rice in water for 30 minutes. Drain and set aside.

2. In a pan, heat the oil and sauté the onions until golden brown.

3. Add the ginger-garlic paste and sauté for another minute.

4. Add the chicken or mutton and sauté until it is cooked through.

5. Add the mixed vegetables and sauté for another minute

6. Add the spices (red chili powder, turmeric, cumin, coriander, biriyani masala powder) and sauté for another minute.

7. Add the yogurt and mix well.

8. Add the saffron milk and mix well.

9. Add the whole spices ( green cardamoms, cloves, cinnamon sticks, bay leaves, mace, star anise and black cardamom)

10. Add the fried onions and mix well.

11. Add the rice and mix well.

12. Add the water and salt and bring to a boil.

13. Reduce the heat to low, cover the pan, and simmer for 15-20 minutes or until the rice is cooked and all the water has been absorbed.

14. Turn off the heat and let the biryani sit, covered, for 10 minutes.

15. Fluff the rice with a fork and garnish with cilantro and mint.

16. Finally, add the fried cashews, raisins and fried onions on the top of the biryani.
